Long owned by Catherine and Rémy Fusaro, Le Cassissier was taken over in 2023 by their son Yoann and daughter-in-law Amandine. The new look is reflected in a trendier name (Le Cass') and a revisited bistronomic menu. There are pronounced Basque touches like Espelette pepper jelly in the goat's cheese salad, ewe's milk cheese and cherry jam with the duck leg confit, and Izarra liqueur custard with the chocolate fondant. A rewarding effort to perpetuate the family business.
