LA FERME D'EMPLUHAUT
Christophe Roux has just been awarded an award of excellence for the 2012 general agricultural competition for the quality and consistency of his products, very regularly awarded in recent years. On his Ferme farm in north-east Gers, Christophe Roux is doing everything from A to Z… once the ducks are high! Indeed, he purchases the ducks already large at a farmer 30 km from there, at the age of thirteen to sixteen weeks, and on them with white corn, according to the Land tradition, for days before being slaughtered. He then concocted, with family, the delicious products of the farm: gras gras of whole duck in verrine, simply seasoned with salt and pepper, heart-filled hearts, magret flux with fatty liver, block containing 30% liver, as well as dried magret, cassoulet, conflict, duck fairway… What to eat!
