The Pacherenc de Vic-Bilh appellation, which straddles the departments of Gers, Hautes-Pyrénées and Pyrénées-Atlantiques, is the sweet fruit of a late harvest. A few plots are selected every year to be harvested on New Year's Eve. This strange tradition was born from a very early frost in 1991. At the time of the usual harvest, in mid-November, the grapes were not ready. Winegrowers have made the bet to wait until the last days of December... to see. To their surprise, they obtained a very beautiful and perfectly balanced cuvée. Since then, New Year's Eve has been an opportunity to return to the vineyard for the last time of the year and make it a festive moment. The harvest takes place in the last hours of the day and the press is done at night.
