CANDIFLOR
At Quint-Fonsegrives, Candiflor perpetuates an old apothecary recipe: crystallized natural flowers. Created in 1818, the bicentenary company works with violets - the emblematic flower of the pink city - but also lilac, mimosa, acacia, rose, mint leaves, which it grows itself on its plantations. Once their tails are removed, washed and wrung out, the whole flowers or petals are then frozen in several successive sugar baths. Once crystallized, they dry on large rectangular sieves. Known for the excellence of its products, Candiflor is courted by the great French and foreign names in the delicatessen industry. Its flowers, petals, broken natural flowers, as well as its smoothed seeds - anise, cumin, fennel, lavender... - are mainly used in pastries, when they are not simply crunched out of greed.
