It is the worthy heir of a bourgeois boarding house founded in 1874, which was then entirely dedicated to "the true cassoulet of Castelnaudary". In addition to its famous cassoulet, the recipe for which has remained unchanged for over a century, Le Colombier offers an à l'ardoise menu for lunchtime service, complemented by a menu of South-Western classics. A sure bet in the city center, with many long-standing regulars.

Je me presente à l’entrée de ce restaurant ers 20h30 sans avoir reservé mais il me semble que le restaurant n’etait pas plein. Une femme blonde, sans s’approcher de moi, me fais un signe derrière son comptoir ( une croix avec les bras) pour me signaler son refus de me servir. Pas un bonsoir ni un au revoir!
Quelle grande classe dans la maniere de mettre un eventuel client dehors.
Je ne peux donc pas donner d’avis sur la cuisine mais je ne risque pas de retenter l’expérience devant tant de manque de savoir vivre.
