You will find the Bàcaro by walking away from the city center, at the bottom of the Guilhemery district, along the Canal du Midi. Thought about the "neo-bistros" model, it is both a wine bar with the honor of independent producers and a careful table provided by Balthazar Gonzales, a young talented chef who has made his arms in renowned gastronomic kitchens. Each week, it prepares a market menu for lunch and a tasting menu for dinner. Fish, ham, magreers, oysters, truffles and other fatty livers are selected from quality suppliers, like the cheeses coming from the home of master affineur Xavier. The framework is beautiful, both refined and warm, the plates are laid down in the rules of art and, of course, the wine agreements are beautifully worked. An address that offers a fine value for money for a nice moment of culinary pleasures.
