The Poux del Mas farmhouse is writing a new chapter in its history with the creation of the GAEC Les Bergers du Causse in 2017. At its head, one hell of a woman carries out her activity as a cheese breeder with panache! She has been able to make the famous Tomme de Carayac, the ewe's milk cheese made on the farm, one of the department's sure values. This woman is Erika! She breeds more than 200 Lacaune ewes and transforms the milk on the farm into cheese forms and dairy products.
