Stéphane Rossignol, a well-known figure in the village of Espédaillac in the heart of the Lot, has been at the head of the Auberge Beauville for nearly 25 years. He has created the cutlery shop Le Lotois XLVI where he makes with passion a simple, sober and elegant knife engraved with his hands. His knives are inspired by those he uses in the kitchen. If you wish to visit him at the inn or in his workshop while passing by Espédaillac, call him beforehand to be sure of his availability.
