ARÔBOIS
Between the vineyards of Cahors and Bordeaux, between the oak forests of Limousin and those of central France, Arôbois has been developing a unique activity since 1997. The company is specialized in the manufacture and marketing of wood chips for oenology. From rigorously selected wood, the company cuts small pieces that will then dry in the open air for at least eighteen months. These chips can then be immersed in stainless steel tanks to share their scents with the wine and offer it an authentic scent as if it had been aged in traditional barrels. In addition to the aromas - vanilla, coffee, toasted, caramel... -, these wooden fragments also release tannins that help to stabilize the colour. They also enrich the structure of the wine, with a thicker and fatter mouthfeel, as well as giving it a sweetened (but sugar-free) note that makes tasting more supple and less aggressive. The use is authorised in France and Europe during vinification but also during maturation - except for some AOCs according to their specifications. Arôbois chips are sold in bulk and in infusion on the company's website.
