Having come from Cestayrols, where he worked for many years in the kitchen of Lou Cantoun, he has now embarked on a new bistronomic adventure in a place with a vibrant soul. Duck breast with plums, crumbled crab with star anise and pimiento reduction, sweetbreads with whiskey... Flavors and creativity are the order of the day, as are homemade bread and fine wines.
