Between tradition and modernity, a cuisine full of flavour and creativity
Stone vaulted ceilings, marble countertops, comfortable, designer wooden furniture, a blend of contemporary and authentic: this is the charming address where chef Bernard Gisquet returns. Having come from Cestayrols, where he worked for many years in the kitchen of Lou Cantoun, he has now embarked on a new bistronomic adventure in a place with a vibrant soul. Duck breast with plums, crumbled crab with star anise and pimiento reduction, sweetbreads with whiskey... Flavors and creativity are the order of the day, as are homemade bread and fine wines.

In het verleden zijn we enkele keren gaan eten in het restaurant Lou Cantou in Cestayrols. We waren bijgevolg nieuwsgierig of de de gerechten van deze chef ons ook in La forge du vieil Albi zouden kunnen bekoren. De gerechten van het menu Terre, de bediening en de sfeer in dit nieuwe restaurant waren top. We komen er graag terug.

La calidad de la materia prima genial, comimos el menu del dia por 21€, algo a mejorar seria la cantidad, ya que de primero nos sacaron una ensalada con lechuga,tuberculo tipico con unas lascas de pato minusculas. Servicio muy cercano y eficaz. Volveriamos.
