It is the official supplier of Carmaux's specialities: aniseed biscuits, and more particularly Scalded biscuits, those aniseed-flavoured biscuits that are scalded just before being put in the oven, which eliminates the starch and makes them more digestible. Relatively hard, they are soaked - in coffee for example - before eating them. It is possible to eat them as an aperitif, after leaving them overnight in dry white gaillac with sugar. You can also find them at the Carmaux market every Friday morning and in some local shops. Feel free to taste them on site before buying them.
