In the old village school, the chef Cyril Cubilié gives a nice gastronomic lesson. A 20/20 from starter to dessert.

School benches may seem like ancient history to you... but think again! Les Mets d'Adélaïde has set up shop in the old village school just outside Castres. The uncluttered decor is enhanced by a few colorful touches. The welcome, as friendly as its host, also deserves a warm welcome! Chef Cyril Cubilié offers fine, tasty and inventive cuisine. On the menu at this gourmet cantine: piquillo foccaccia with olive jam, hake au gratin with tandoori, teriyaki-style confit pig cheeks..

Merci encore de cet excellent moment
Tout est parfait, l'accueil de Jessica sous le préau, le décor raffiné, le tableau pour les enfants , la cuisine délicieuse , recherchée, sublimée avec herbes, fleurs , de Cyril , les demandes particulières ( ex dessert) dignes d'un pâtissier gourmand! sans oublier les petits pains originaux( attention pas trop au début, la suite est copieuse!).Bref, lorsqu'on y vient, on y revient!

Un lieu charmant, service impeccable
Ancienne école du village, c'est classe sans l'être trop, on a de la place, pour bouger, discuter pas comme dans d'autres restaurants.
La cuisine faites par le Chef Cyril Cubilié est recherchée, son épouse au service est généreuse, toujours souriante. La carte des vins reste correct mais pourraient mieux faire. En un mot : Revenir

What a pleasure to discover such a welcoming place! ... and that recalls the period of schoolboy us. As for the dishes: simply excellent (we are gourmet). To discover with friends.
a real delight, excellent and creative cuisine a discreet and charming welcome and when you have to eat on the terrace you feel live one of these moments outside. basically a good address that can compete with the largest, bravo to both.

No big nor small country, France becomes huge when it is finding the nuggets of its national gastronomy. Some works (obviously the Michelin guide) guide you advisedly. Otherwise you must let go to this temptation of the pleasure inspires you such or such table. Here are three years, very exactly on November 25th, 2006, we stopped in one of these charming hotels "Castel de Burlats" where the walls are steeped in history. It was newly arrived here, Cyril and Jessica. Right in the buildings of the adjacent restaurant.

Almost nothing... a very small room: five tables, fifteen seats no more, a kitchen small size. And yet in these small buildings, Cyril and Jessica were about leading miracles.

If cuisine where Cyril (the "Garden opera" in Toulouse, "the reserve' Albi and "table of the sommelier" in Castres) is small, it is not less ultra modern. The dining room looks like a lounge more where Jessica would receive some friends. During our first passage we had been attracted to the point to write.

Three years later, without being ever returned there here we are back to celebrate on November 28th, dates expensive in our hearts. Table where we sit charming stands opposite the fireplace where a log fire burns. The armchairs, the chandelier with three branches and especially the delicious welcome Jessica are a beautiful invitation for this moment that announces exception.

"The Adelaide" have nothing to do with the luxury hotels of gastronomy, no chef row, waiters, nor sommelier... only Jessica sums up all with a charm, competence, precision in the gesture which forces admiration.

But we do not forget came "also" for the kitchen. Not return on November 28th that once in the year... we chose the tasting menu (56€).

And there, we let ourselves by this culinary poem that Cyril will unroll us throughout the evening: a masterpiece, a festival of flavours, each more attractive than the others. A presentation stepped tastebuds washed down with the wine whole recommended by Jessica.

The paintings in mouth, interludes have this meal a wonderful festival which we want to give you an idea:

Foie gras with duck aglets and peppers - prawns right seizure, vegetables wok, stock with cumin and cardamom - Tournedos with bacon with fricassee trumpets and chanterelles - veal kidneys with compote onions and potatoes and carrots melting, reduction of pepper sauce - Cheeses: casinca (corsican of sheep), pellet of Avesne, Puligny St Pierre (goat) - Milhojas de pancakes and pears poached with its jam cream and granite sangria.

They are quite attractive names but beyond there are the tastes, these flavours that from one service to another are not contradicted.

Three years ago we had been seduced and had told we. Today we let us be even more for it because they acquired trade that shares, once a little too copious, are now perfectly proportioned.

Then that can imagine in Burlats, in the Tarn, in this end of valley, almost at the end of the world... there is a treasure. Two passionate young people who make few hours that you try unforgettable. To be convinced some it was to hear the friendly compliments of the "guests" leaving at the end of the evening this unusual restaurant.



*S' regularly with the privilege to taste the renowned tables of our region (Languedoc Roussillon) we can only say "dishes Adelaide", while being very different by their size, can easily compete with the best.
