Didier Smolinski, a passionate man, guided by a family history rooted in the vine (grandson of a winegrower and son of a forester), naturally came to vinify himself in different regions: Minervois, Coteaux d'Aix, Châteauneuf-du-Pape and Gigondas. Today in Gaillacois, his ambition is to produce authentic and sincere wines. "Respect your vineyard, it will give you the best of itself": this is how his philosophy can be summed up. Enhance the richness of its terroir and respect the cycle of seasons; develop fermentations with natural yeasts for more authenticity, richness and aromatic complexity; limit interventions in the vineyard and on the wines, in a concern for controlled yield and respect for nature... It offers a wide choice of white, rosé and red wines, including exceptional vinified and matured in barrels: L'Émotion (AOP Gaillac dry white), La Quintessence (AOP Gaillac sweet white) or Le Secret de la Barrique (AOP Gaillac red).
