LA PALETTE
"Simplicity is the secret to success," said Rochette. What better illustration than this refreshment bar in the centre of Lacaune? After several years travelling with a pancake and pizza van to local markets and festivals in the region and working in a Salvages store, Julien Lopez decided to put down fork and apron on rue de la Mairie. A child of the country, the young chef took over an almost abandoned building and brought warmth and friendliness to it. In his establishment, he offers to eat pizzas, burgers and many other symbols of fast food on the premises or to take away. The difference is that here he makes his products entirely by hand and insists on using Red Label flour to make his bread. With its late closing time, it is also the ideal gourmet spot for night birds.
