The traditional cuisine is like the place: simple, friendly, family-style but with just the right amount of refinement. Because the chef, Thierry Bouas, is a true epicurean. A fish terrine, a duck breast, a crozet gratin, a cheese puff pastry, a veal curry with chickpeas... It is a simple and effective cuisine to calm the ardour of the stomach. You don't have to have read the complete works of Proust to discover this canteen.
