Restaurant on the road to Bergues in a bucolic environment offering a refined cuisine.
A former farm dating back to 1782 and then a post house, Le Soubise, located on the road to Bergues, is an institution. The environment is bucolic and the beautiful brick facades reinforce the beauty of the place. Its chef Michel Hazebroucq who has been cooking since 1959 (!) opened this good address in 1984. Since then, he has treated with his à la carte menu on a daily basis and inspired by the market of the day. There are, however, fundamentals: a fishing exclusively from the coast, bought every morning at the local auction market, regional products, and a bakery from which bread and desserts come out. Everything is homemade! After the service, the chef likes to talk about his cooking, gourmet, "old-fashioned" but with always a "crazy" touch. A refined, subtle and cuisine lightened from the bad conscience of too rich dishes. An authentic address between the plain and the coast. A local gastronomy that always honours Flanders (Ghyvelde asparagus with separated egg and butter sauce, half-pigeon from Flanders of Alex de Steenvoorde, or desserts scented with violet). At lunch or dinner time, it's better to book!
