In fact, he has acquired his unique know-how from the many restaurants around the world where he has worked: the United States, Japan and England. And that's not all: in France, he worked alongside Michelin-starred chef Daniel Ettlinger! A CV that he puts to good use in the kitchen of La Grange, a restaurant in the forest of Marchiennes, housed in... a barn! The challenge?
