BOULANGERIE-PÂTISSERIE FIEVET
The town of Aire-sur-la-Lys is full of culinary specialities. The Fievet family bakery run by father and daughter is one of the few shops in this town to offer you the mastelle. This small oval-shaped shortbread-type dry cake, made, among other things, of powdered almond, brown sugar and orange blossom, was invented by a certain Cyrille Faes more than two hundred years ago. Ten years ago, the tourist office decided to relaunch its production with the help of the town's pastry cooks. The mastelle can be enjoyed with a small coffee. You'll see, you won't be disappointed! The two other specialities of the house are Vauban (sponge cake, butter and kirch cream, meringue, praline-flavoured buttercream; finished with chocolate icing or chocolate powder) and Créquillon (light praline cream, praline crunch, Caribbean chocolate mousse, almond biscuit and daquoise biscuit).
