The chef will introduce you to local produce with generous dishes and regional specialties: duck foie gras, porcini omelette, cod piquillos, pig's trotters, suckling lamb, roast or salted pigeon (house specialty) depending on the season, Basque cake, coco-lait "real whole milk flan".
