The Ithurria restaurant in Ainhoa, Basque Country
in 1962, after twenty years' experience in their first restaurant, Marie-Louise and Émile Ithurria bought the "Alaborda" farmhouse in the heart of Aïnhoa to set up a business, to which they gave their family name "Ithurria". Marie-Louise in the kitchen and Emile, the former smuggler at the reception, were soon supported by their daughter Maritchu and their son-in-law, Maurice Isabal, who brought his creativity to the classicism of the house repertoire, sprinkling it with a stream of original ideas to establish the house's reputation. In 1990, their two sons, Stéphane in the dining room and Xavier in the kitchen, assisted their parents before "taking over" in 2007.
With an air of youth and modernity, Xavier's remarkably masterful cuisine is faithful to the house tradition: the market is the law, and produce is always in season! His menu is a festival of original ideas, where fish from the coast rub shoulders with all the gourmet treasures of the Basque-Béarn repertoire, all rounded off by desserts of rare elegance. In the dining room, Stéphane demonstrates his talented complicity with his brother when he comments on his menu, and lets his passion for wine shine through when he presents the treasures of his exceptional cellar.
