Another extraordinary idea of the Oteiza family and a handful of breeders that surrounds them, this discovery trail of the Basque Pig breeding, in the Aldudes valley. A real game of tracks, in search of the fauna, the flora of this marvelous wild corner, on the tracks of course of the famous pigs. Some advices are given to you. The first one : " you can take your mount as the doctor used to do when he came up from the valley to see his patients... " The second, "do not miss the flight of griffon vultures, group of kites or buzzards, the southern wind gives you the impression of being able to touch them... " The third, "approach the breeding parks on the slopes of the mountain ... " The seventh, "magnificent views of Orreaga (Roncesvalles) and Eznazu, a small district of Aldudes where pastoralism is passed down through the generations..." And so on, until the end, a beautiful immersion in nature, a virgin nature, rich and haughty and on the way back, as a reward, a gourmet stop to discover the cheeses of the valley and of course the products of Pierre Oteiza, (ambassador of the taste in the Basque Country) for tasting and sale. With the possibility to eat on the spot, at any time, around nice tasting boards as "at home" in the large room or on the shaded terrace. An address not to be missed where know-how is combined with savoir-vivre. A whole program... and bon appétit!

Breeder and craftsman in the Aldudes valley in the Basque Country
Pierre Oteiza, born in the family farm of Aldudes, is a Basque pig breeder; he created his artisanal company nearly 30 years ago. A fierce defender of his valley, authentic and traditional, he dreams of making people discover its hidden natural resources and of seeing it develop:
- He raises his Basque breed pigs in freedom on 15 hectares of meadows and woods. The pigs feed on grass, chestnuts, beechnuts and acorns and complete their food ration with non-GMO cereals.
- He is committed alongside the breeders of the Basque Pork industry, in a process of recognition in Appellations: Controlled Origin (AOC) and PDO for Kintoa Ham.
- He elaborates his hams, sausages, pâtés and cooked dishes with time and passion, in the greatest respect of the products and the tradition.
- He selects his raw materials by privileging the local producers and farmers (calves, wines, peppers, cheeses, fruit juices...).

In Aldudes, discover the maternity hospital and the educational path of the Basque pig: in 15 steps and during 1h15, discover the Basque pig raised in the middle of nature, the flora and the local fauna. Map and stick available at the store at the start of the trail.
After your walk, a break is a must: discovery boards (cold cuts, pâtés, black pudding, duck breast...), "On egin" cones and local drinks to enjoy in our tasting area inside or on the terrace!
