ARAMID CAYOLAR
The term cayolar refers to a shepherd's hut at high altitude. Traditionally, the shepherd lived there during the summer and made his cheese. More than just a house, this name refers to a whole habitat and a complete microcosm with a house, an adjoining enclosure, the milking yard and the meadow where the sheep graze. The one in Aramits has been rebuilt, stone by stone, from an old hut in the Pierre Saint Martin and its layout is faithful to those of the past when cheese was made there and the shepherd spent his summer there. It is because the cayolar is typical of a tradition, not so distant, that the visits during the pastoral evening are so appreciable.
