The Vieille Auberge has been located in the heart of Arzacq for two centuries, but the rare menu is as modern as the way of cooking is unique: here, everything is done in the fireplace! The establishment strives to bring traditional specialities up to date, always using fresh produce, in sometimes surprising combinations around duck, pig, lamb, beef, fish and game. The menu changes every 3 weeks but the essentials are there: snacks from Béarnais or Basques, garburade, foie au chocolat et au caramel de Maury, sweet red wine, pot-au-feu au talon de jambon... most of the dishes are creations and just like the fillets of Rossini pigeons flambéed with green izara, it's a delight every time! In the majestic restaurant room, you will enjoy watching them being cooked in the monumental fireplace. You will enjoy yourself while savouring the humor and jovial welcome of the chef, the local child who makes all the tones of his land sing in the decor, the atmosphere and the dishes: a real success!
