Le Chistera is a Bayonne signature. The name is already a symbol of the Basque Country and one of its "king" sports, Basque pelota, although it's no coincidence that the restaurant is so named, since generation after generation of the Marmouyet family have distinguished themselves in this sport. And the Marmouyet family's savoir-faire in Basque cuisine has been perpetuated by the new owners: cod salad, koskera hake, piperade ham, Basque tripe, Basque tripe, veal axoa, rugby-style prime rib, homemade desserts, and more.

Bonne tête de veau, mais un peu noyée sous la sauce gribiche...
Bonne viande rouge, cuite comme demandé (saignante : ce qui ailleurs devient rare !).
