Le Chistera is a Bayonne signature. The name is already a symbol of the Basque Country and one of its "king" sports, Basque pelota, although it's no coincidence that the restaurant is so named, since generation after generation of the Marmouyet family have distinguished themselves in this sport. And the Marmouyet family's savoir-faire in Basque cuisine has been perpetuated by the new owners: cod salad, koskera hake, piperade ham, Basque tripe, Basque tripe, veal axoa, rugby-style prime rib, homemade desserts, and more.

A charming welcome, with very competent and professional service (with a BIG smile) throughout my meal.
The whole team is visibly made of "the right stuff" with truly excellent and authentic cuisine and food.
I had the best "foie gras" for a long while, and the "magret aux cerises noires" was totally delicious. I even needed extra bread to mop up ALL the remaining sauce !
