Fabien Feldmann, starred chef at L'Impertinent in Biarritz, invites us to discover his latest creation, a bistronomic restaurant-bar in the heart of Bayonne (in front of Sainte-Marie Cathedral). This former courthouse, subtly revisited with a beautiful alchemy of materials, offers cosy spaces both on the terrace, surrounded by buildings with typical architecture, and inside, with a view of the brigade and its privatized lounges. Boudin maison, ceviche de la criée, tête de veau, gnocchi lierre terrestre, coulant au chocolat... talent at every turn.

Une cuisine correcte, nous avons apprécié la qualité des produits mais qui pouvaient à notre avis être travaillés de façon un peu plus originale peut-être. Le boudin d'apéro était bon mais inégalement réchauffé, un peu dommage. Le poisson du jour bien cuit, mais un peu noyé dans trop de purée. Le poulpe fumé cuisson réussie, très moelleux, bien que je le préfère à l'espagnole, un peu grillé et moins sec. Délicieuse poitrine de porc. Très bon vin. Les prix sont un peu élevés, pas totalement justifiés, surtout pour la carte des vins. Un bel endroit mais la table qui nous a été proposée était très proche de nos voisins, leur conversation était sans doute pour eux intéressante, moins pour nous. Nous avons demandé à changer en arrivant, mais on nous a répondu que l'on nous avait placé selon l'ordre des réservations. J'avais réservé en fin de matinée. Tant pis. Donc, adresse convenable mais rien ne justifie que nous revenions.

Nous venions pour la seconde fois dans ce restaurant ! les vins sont très appréciables et bien conseillés, grand choix y compris au verre. Petite déception concernant la cuisson de la viande (le porc) qui du coup était trop gras.
