If you're told the mongoose, you think of the animal. And if you are told that it is an agile, fast and carnivorous animal which knows how to show a strong capacity of adaptation in particular by modifying its diet if necessary..., well you will notice that this definition fits perfectly with this trio of thirty-year-olds at the controls of this establishment. Indeed, by opening their restaurant in place of Coup Fourré in October 2020, one week before the2nd confinement, JC, Greg and Antoine (Café sur Cour, Mata Hari, l'Industrie) had to show reactivity and change their approach. The bistronomic cuisine initially planned gave way temporarily to a single pizza menu until the economic situation improved. But the convivial spirit remains. Without forgetting the values to which our guests are attached, i.e. working with fresh, seasonal, local and organic produce as much as possible. The pizzas are thus made from organic wheat flour. We love the nutty taste of the small potatoes of the Jurassian cream base, we melt for the sweet and salty Cabécou with honey, we love the tasty four cheeses... A slow fermenting dough for a flavour that is both crispy and soft, in short, we quickly become a fan! And above all, we can't wait to rediscover Rémi's dishes like this veal shoulder confit for 7 hours. In the meantime, we take comfort in the wines offered by Aude, a sommelier passionately committed to the winemakers and winemakers nature that she promotes at Canons le salon!
