Delicious seasonal cuisine by Geoffrey Guihéneuf and a fine selection of wines in a pleasant brasserie in the heart of Nantes.
Welcome to Canopée, the pretty brewery designed at the end of 2019 by Anne-Laure and Vincent Caillard as a pleasant green setting in the heart of Nantes. In this friendly establishment which succeeded the Fiefs de Vigne (a cellar well known to the people of Nantes), you will be seduced by the elegant design decoration combining modernity and a nod to nature. In this fabulously atypical and deliciously green space, under the glass roof, you can take a seat in the large room with its wide and comfortable green benches or on the recessed mezzanine on the first floor. On the plate side, you can enjoy an à la carte menu of seasonal French cuisine using local produce to boldly reinvent the classics. Conceived by Chef Geoffrey Guihéneuf, Vincent's brother, the dishes, whose flavours and textures delight our taste buds, are of great quality. And there's no mistaking it, especially since the canopy is the treetop! As a starter, we savour the tasty sea bream ceviche with orange, lemon, fennel and hazelnuts, or the perfect egg kale, Jerusalem artichokes... To be followed by a dish of veal à la corse, olives, ventrèche, Anna Maria potatoes or Norman sirloin steak matured for 45 days, home fries, and Chimichurri sauce, or scallops with cauliflower, spinach and iodized foam, hazelnuts... And to finish, we taste the spicy carrot cake, roasted nuts and cream cheese or the cocoa crispy chocolate mousse. The wine list offers beautiful bottles. It is necessary to reserve.
