Restaurant-bar with excellent seafood cooked with love.
Or the art of taste slapping. Opened at the beginning of summer 2019 by Léo Huet and Maximilien Degroise, this restaurant is indeed marvellously jostling our taste buds. Léo, the Chef, trained at the Poissonnerie Mais Pas Que and the Instinct Gourmand. Maximilien, the bar and service specialist, comes straight from the next door, the former By Sainbioz. He will be able to advise you among the good wines, most of them organic, on the menu or even direct you towards a cider from the Cidrerie Distillerie de l'Apothicaire, created by Mathieu, who is none other than Léo's brother. Mastery of seafood cooking, audacity of the mixtures, originality of the flavours... we let ourselves be surprised by the entry of gravlax de maigre, rocket, lemon and salicorne coulis... we then savour monkfish, nori seaweed, edible crabmeat, shiitake, romanesco cabbage and we finish divinely with ginger shortbread, creamy yuzu, tuile grué de cacao and lemon coulis. A minimalist menu, a guarantee of freshness and quality, in an intimate setting, a guarantee of warmth and authenticity: the plates are beautifully prepared before our eyes by the chef who elaborates his recipes with local and seasonal products. We can only applaud and clap our hands enthusiastically to this new duo!
