Lucie Berthier has all the makings of a great chef. In the heart of Nantes, the former Top Chef contestant has created a warm, modern place in her own image. The menu, always surprising, follows the seasons, emphasizing fresh, organic produce and small local producers. The aim is to achieve zero waste and minimize the carbon footprint. We're delighted with this initiative, and all that's left to do is choose your sequence: animal, vegetable or food and wine pairings. Enjoy girolles with chestnut-tonka pommade, mussels philippe with hazelnut butter aioli, beef maillard with sweet spices. And we're amazed by the chef's creativity, right down to the names of her dishes.
