An elegant and demanding cuisine to be discovered without delay.

From market cuisine at lunchtime to gastronomic delights in the evening, we love this young, elegant and demanding restaurant on Rue Fouré. Jérôme Berdelou and Estelle Méheust have succeeded in making it a place apart, with two rooms featuring exposed stonework, one of which opens onto the chef's open kitchen. Jérôme, a gifted pastry chef, concocts subtle, refined desserts. His creativity is a perfect complement to that of his partner-chef, who creates magnificent dishes such as fish from the fish market with onion confit, chanterelle mushrooms and Kalamata olives. The products, 100% homemade (including bread), are sourced locally. As for the name Bairoz, it's a nod to the peppers and spices that spice up life.

Superbe adresse. Tout était excellent, des saveurs subtiles, les jeunes chefs sont aux petits soins. Notre 2e visite était aussi extraordinaire que la 1ere, peut être mieux encore. Merci pour cette belle découverte. A tester et à consommer sans modération !

Une expérience imbattable. Entrée/plat/dessert 26 €. Des assiettes plus talentueuses les unes que les autres en présentation comme un goût dans un lieu intimiste et doux. 26 € c’est quand même dingue. Le dessert qui paraissait quelconque « mousse au chocolat glacé vanille » s’est révélé être surprenant par la texture avec un intérieur glacé et biscuité semblerait-il au sarrasin. Bravo à toute l’équipe discrète et bien sympathique d’ailleurs. Un coup de pousse des tables de Nantes mérité.
