You've got to earn it at the Auberge du Haut-Marland, a little out of town in the heart of the Parc de la Brière! But it would be wrong not to insist. Duck, eel and frog, the stars of the marsh, are on display here in all their richness. Home-made terrine of poultry livers marinated in white port, followed by the speciality, eels in parsley or cream sauce. The establishment also has 2 guest rooms, one of which is a suite if you want to stay overnight in this unique environment, and two halls for weddings and special occasions.
