Squid tagliatelle, scallop carpaccio with vanilla olive oil, langoustine and foie gras with artichokes glacé au jus, Ciboure blue lobster, poultry stuffed with smoked bacon, garlic and parsley... Sweet dishes are just as refined and elaborate: traditional baba au rhum, candied apple tart with apple caramel coulis, honey-roasted nectarines...
