This new Biarritz inn is just the way we like it. It's friendly, generous and professional, in a 19th-century Basque building with a soft, colorful interior and a panoramic view of the countryside and the Pyrenees mountain range. Sébastien (Michelin-starred chef) and Kevin, surrounded by a crack team in both kitchen and dining room, offer a cuisine steeped in local produce, in tune with the seasons. Local poultry and lamb, fish from the fish market, vegetables from the garden - it's all local! Fresh foie gras pot-au-feu, sweetbreads au jus, "Ortolan" quail, Armagnac savarin...
