The chef, Fabian Feldmann, has always defended the same philosophy: get involved, innovate, create dishes that leave no one indifferent, using fresh organic or sustainable produce, offering fish from the fish market, making his own bread and discovering other ways of cooking... It's no surprise, then, that the restaurant has gone from one star in Germany to one Michelin star in Biarritz. The setting and service are impeccable, and the inventiveness and flavors on the various menus are expressed with talent.
