Set in the midst of nature, not far from the Croix de Buzy hiking trail, l'Etable d'Ossau is a perfect marriage of Matias' Argentine and Kristian's South-West. These two friends met in the kitchens of Buenos Aires before coming to the Pyrenees to seal their gastronomic union. The result is boldness on the plate, with a firm belief that local, seasonal cuisine is the only answer! Menus are constantly rethought. We particularly appreciate the sincerity with which the produce is handled and the mastery of cooking techniques. Nestled in this former 19th-century sheepfold, this restaurant promises to be one of Béarn's finest addresses.
