Gastronomic hotel-restaurant offering a menu of seasonal dishes inspired by the chef
This gastronomic restaurant is located in a place that will delight lovers of architectural heritage: the mansion created by Périer du Bignon in 1777 and entirely renovated from 2004 to 2008. It's a truly superb setting, which you discover as you cross the cobbled courtyard. The rooms have the charm of the Ancien Régime, when wealthy people had taste. The menu features dishes that change with the seasons and the whims of Pascal Aguittaz, the chef who arrived in 2011. Thus, on the menu (and... on the plates of those who ordered them), just-snacked king scampi, pea and horseradish guacamole in a light mousse, lemongrass oil; half a Breton lobster grilled in three flavors, beetroot passed through churned butter, and, among other desserts, honey-fried apricots on a Spritz sablé mousse with fromage blanc and citrus zest. As for wines, the first bottle is under €30 and the most prestigious at €535. For those who want to break the piggy bank and splurge, the Carte Blanche menu offers nine courses (€65 + €25 for wines).
