LA FERME DU PAYS DE PAIL
Vincent and Marie-Hélène Demoitié and their three children came from Belgium in 2015 to take over the processing activity on the Belles Maisons cheese farm. Out of the 320,000 litres produced, half is transformed into faisselle, fromage blanc and yoghurt, and above all into Tomme de Pré-en-Pail, inspired by the Savoy cheese, the flagship product of the farm. The 104-hectare farm, equipped with a barn-drying system, is run using organic farming methods. The new farmers are keen to develop the Normandy cow herd to the detriment of the Montbéliardes.
