Since the 1970s, this institution has been perpetuating the family recipes that make it an authentic place for Basque cuisine, with so many classic recipes mastered by the chef, without neglecting creativity. From the moment you enter Chez Mattin, you breathe in the Basque Country, from the decor to the plate, everything is a reminder of the region's riches. The (deliberately short) à la carte menu, depending on the season, includes cod confit amatxi style, whole roasted veal sweetbreads, Pireneika entrecôte and, of course, their famous Ttorro, the speciality!
