The chef sublimates the raw products of the French terroir to create distinctive, aromatic, delicate and surprising flavors on beautiful plates. Example of today's menu: scallop carpaccio, Jerusalem artichoke purée, passion fruit, coriander oil, followed by Ferté-Bernard lamb, sweet potato cremeux, roasted chestnuts, pear pickles and, for dessert, finger pain de gênes with poppy seeds, lemon-yuzu whipped ganache, roasted pineapple, lemongrass ice cream.
