The Darraïdou family has preserved this superb dining room for five generations, revealing an era and a region. In the kitchen, Auxtin and his team showcase local producers in a menu representative of local gastronomy. Dishes vary with the seasons: homemade foie gras, Banka trout, axoa, Biscayan cod, merluza salsa verde, lamb sweetbreads, duck breast, Ibaïama pork txuleta from Ospital, homemade flan (Koka) are just some of the house's "flagship" dishes... A true ode to the land.

A notre dernier passage de fin septembre 2015, c'était tout autre chose, encore plus chère, mais surtout moins bon. Le plat typique du restaurant n'était pas bon du tout, veau trop sec et morceaux coupés trop grossièrement, sans goût.
Quand à l'hôtel, c'était tout juste propre.
A évitez...
Cuisine de tradition basque, avec le fameux piment, bien sûr.
