Proud of his home region, he buys from local producers and works with their produce to create a range of menus: scallops and quail legs with passion vinaigrette, crispy puff pastry with smoked paprika, then maraîchin veal and snacked scallops, morel mushroom duxelles with organic bacon and, for dessert, vanilla cracker puffs, sesame almond nougatine, mandarin sorbet, mango pineapple marmalade.
