The cuisine is traditional, based on fresh produce, with a predilection for fish and seafood. Specialties include seafood sauerkraut or smoked haddock-style pollack, vanilla cauliflower, preceded by foie gras, oysters or stuffed clams. Meat lovers will appreciate the originality of duck breast with honey and thyme, celery and cocoa beans.
