You have two options. For a quick break, you can sit down at the bar on the ground floor for a drink and a quick bite to eat a gourmet salad or a combination of candied sausage. Do you have more time? Then you can go upstairs for a gourmet and gastronomic break, to find yourself in an amazing room, typical of the region with its tables dressed with tablecloths and Basque linen. Chefs Mathias and Gérard will make you discover a local cuisine around the great classics in a menu that changes according to the seasons. On nicely covered tables, you will discover dishes from the past: semi-cooked duck foie gras and its toasts, Ibaïma ham from Mr Ospital, pavé de maigre with garlic cream, chipirons à l'américaine or veal kidneys simmered in the old-fashioned way... And of course the sheep's cheese and its black cherry jam, the traditional Basque cake... Made in the Basque Country, sorbets and ice cream!
