The company Champignons Ruol has dedicated its activity to the cultivation of... mushrooms. White, rosé or forest, they are ideal for salads and dishes in sauce all year round. That is why Ruol Mushrooms takes great care to produce high quality mushrooms in one of the historic cradles of mushroom cultivation. All of its production is certified as Origin France Garantie. The products are also stamped with the Terroirs de Picardie brand.
History. Since the 19th century, mushrooms have been cultivated in Soissonnais quarries. Twenty years ago, there were 300 producers in France, today there are only 25.
The history of Champignons Ruol began in 1962 in Vendhuile, a small green village, with Jean-Louis Ruol's simple ambition: to grow mushrooms. In 1981, he moved to the Soissonnais quarries where mushrooms flourish naturally in a universe of limestone rock. Little by little the company grew and the Ruol children joined the activity. In 1999, the family-run SME established itself on the edge of the Billy-sur-Aisne woods and adopted new means of production while remaining respectful of tradition. Indeed, it takes more than a month for the mycelium to become a fungus. The first three weeks of cultivation are carried out in buildings that reproduce the same temperature and humidity conditions as in the basement. Then, when the mushrooms have grown to the size of a pea, they are transferred to the cellar.
The products. Ruol mushrooms produce white and pink mushrooms. She also grows forest mushrooms: chanterelles, chanterelles, sheep's feet, trumpets and porcini mushrooms. Finally, it offers sliced mushrooms ready to be savoured.
