This sumptuous castle is considered to be the largest 4-star castle in France. Nestled in the heart of the Chantilly forest, it attracts guests wishing to experience a romantic moment in the hotel as well as at the table, as chef Stéphane Gourault knows his classics inside out. Among them are monkfish roast in a chorizo and dried pepper crust, ratatouille niçoise; roast pigeon, stuffed between flesh and skin with beggar's fruit, French-style peas, braised turnips and carcass juice. For dessert, the lemon tart with strawberry and basil soup or the Love délice (to be enjoyed as a couple) are a must.
