L'Échanson offers refined French cuisine in a sober and modern setting near the cathedral. Among the specialities are sea bass fillet and quinoa à la provençale, monkfish rolled with salmon, lentils and sweet potato, or veal tenderloin with mushrooms. In this fine brasserie, wine is also in the spotlight: and with good reason, originally, the cupbearer was indeed a trusted officer in charge of serving the prince or lord a drink. The customer is therefore offered a rich list of great wines, served by the glass or bottle. With a capacity of 75 covers in normal times, the restaurant can also accommodate up to 110 people.
