The chef offers regional cuisine that revolves around the duck as a house foie gras, hot liver, duck magret, onions steeped in whisky, crystallized thigh duck, canard duck in Thai, with fried vegetables…. And you may also be able to sample salmon crisp, Chinese sprouts with thyme and white butter, as it is the particularity of this establishment, to be able to combine typical local cuisine with exotic flavours. A perfect blend of the raw world and the world that one owes to the head who criss-crossed the planet (Melbourne, London, Chicago) before spending 4 years as head in Ireland and settling in Béarn. He holds a master's hand the Crazy Duck alongside his wife from this last destination. A true cultural pot that is found not only in the plate but also in the decoration, discreet but nice, in the oriental style.
