The garbure béarnaise is a must, but also awaits you with pretty home-made proposals such as the savoury tart with onion confit in Jurançon with ham and cow's cheese from Béarn, or the chacouka, piperade with ham and fried eggs. We also appreciate the plate specialities of Béarn with blood sausage and andouillette béarnaise. Typical and local flavours are proposed and Joël masters them to the point of sublimation.
